Varia EVO Hybrid Grinder

USB-C のモーターユニットとマグネット着脱のハンドルを付け替えて、電動と手挽きを切り替える。刃は VS3 と同じ 38mm ステンレス Hypernova。公式は 140段階・1段階 10ミクロン、ホッパー 30g、電動は 80RPM。細挽きは手回しで、と公式が書いている。筐体は CNC アルミ、公差 0.02mm。公式ストアの現行名は Gen 2。

- Official range is espresso through hand drip and cold brew.
- Electric grinding is 80 RPM. For a really fine grind, Varia says to use the hand crank.

- Dial markings are 0–60; past one full turn the reviewer counts 70, 80, …
- At 100 clicks filter lost a blind tasting vs a Mazzer; at 130 it won; at 150 it was the sweetest filter cup of the review.
- Motor grind times in the review: Nordic Light filter at 150 = 0:40; medium espresso at 16 = 1:43.
